Here we analyzed the pellets after several months of storage, so we are as close as possible to the true taste of each hop variety. This contrasts with an analysis of <a href=\"https:\/\/www.hopstore.fr\/apprendre-a-lire-et-se-mefier-des-analyses\/\">a few selected and over-dried cones&#8230;)<\/a>[\/vc_column_text][vc_column_text certain compounds are present in all varieties!<\/p>\n<p>Indeed, Myrcene and Humulene stand out in the 14 hops in a predominant way, largely overshadowing the others whose quantities are too small to appear.<\/p>\n<p>To improve their visibility, a dual-scale system has been implemented, but perhaps 3 or 4 scales would be needed to reveal certain compounds&#8230; Note that even if they are in small quantities, they can be expressed in beer. <\/p>\n<p>By reversing the axes, we can better identify the champions in each category:<\/p>\n<p><a hop?<\/h1>\n<h3 data-path-to-node=\"2\">Total Oil Content (mL\/100g)<\/h3>\n<p data-path-to-node=\"3\">GC\/FID analysis gives the <b data-path-to-node=\"3\" data-index-in-node=\"35\">percentage breakdown<\/b> of the components (the proportion of each oil in the mixture), but it does not tell <b data-path-to-node=\"3\" data-index-in-node=\"131\">what total amount of oil<\/b> the pellet contains.<\/p>\n<ul data-path-to-node=\"4\">\n<li>\n<p data-path-to-node=\"4,0,0\"><b data-path-to-node=\"4,0,0\" data-index-in-node=\"0\">Why this makes all the difference:<\/b> Imagine two hops with 50% Myrcene. The first has 1 mL of total oil per 100g, the second has 3 mL. At the same dosage (e.g., 5g\/L), the second will be <b data-path-to-node=\"4,0,0\" data-index-in-node=\"174\">three times more aromatic<\/b> .  <\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"4,1,0\"><b data-path-to-node=\"4,1,0\" data-index-in-node=\"0\">The benefit for the brewer:<\/b> A high total oil content (e.g.&gt; 2.0 mL\/100g) allows you to reduce the amount of plant material in the fermenter (less &#8220;sludge&#8221; and less beer loss) for the same aromatic impact.<\/p>\n<\/li>\n<\/ul>\n<p><em>=&gt; We&#8217;ve written an article about oils; you can find it <a href=\"https:\/\/www.hopstore.fr\/les-huiles-dans-le-houblon\/\">here.<\/a><\/em><\/p>\n<h3 data-path-to-node=\"6\">Thiols: The Hidden Side of Aromatic Herbs<\/h3>\n<p>Thiols are sulfur compounds present in minute quantities (nanograms per liter), so small that they don&#8217;t appear on conventional chromatography, but our nose is <b data-path-to-node=\"7\" data-index-in-node=\"185\">thousands of times more sensitive<\/b> to them than to terpenes (Myrcene, etc.). They represent less than 1% of aromatic compounds, yet they play a fundamental role in the aroma of a beer, and therefore its taste. <\/p>\n<p>We conducted tests last year (through several collaborations) which confirmed this impression: <strong>it is possible to make good IPAs without using hops from far away<\/strong> . However, the main difference is noticeable (and that&#8217;s putting it mildly) in the flavors: the aroma. <\/p>\n<p>These NZ and US hops are distinguished by their -thiols (free and conjugated) which are readily and quickly available from the first grams.<\/p>\n<p>This means it&#8217;s entirely possible to make <strong>a very good IPA using a minimum of New Zealand and US hops<\/strong> . Our collaborations this year should prove it. <\/p>\n<p>Further work is also possible on <a href=\"https:\/\/www.hopstore.fr\/en\/biotransformation-the-fundamentals\/\" target=\"_blank\" rel=\"noopener noreferrer\" type=\"absoluteLink\">biotransformation<\/a> and <a href=\"https:\/\/www.hopstore.fr\/en\/adjust-the-water-to-make-an-organic-neipa\/\" target=\"_blank\" rel=\"noopener noreferrer\" type=\"absoluteLink\">water profile<\/a> to improve these results even further. We&#8217;ll discuss this again soon. <\/p>\n<p>Indeed, some European hops contain quantities of thiols and precursors that are underestimated.<\/p>\n<p>The main difficulty is that the search for thiols requires a much more complex technology (GC-MS\/MS) because it is necessary to detect minute traces in the middle of an ocean of other molecules.<\/p>\n<\/div>\n<div id=\"model-response-message-contentr_577d450b618135f9\" class=\"markdown markdown-main-panel stronger enable-updated-hr-color\" dir=\"ltr\" aria-live=\"off\" aria-busy=\"false\">\n<h3 data-path-to-node=\"3\">The Hop Deterioration Index (HSI)<\/h3>\n<p data-path-to-node=\"4\">This is the most crucial analytical data after the oils. HSI measures the oxidation of alpha and beta acids; the lower it is, the better. <\/p>\n<ul data-path-to-node=\"5\">\n<li>\n<p data-path-to-node=\"5,0,0\"><b data-path-to-node=\"5,0,0\" data-index-in-node=\"0\">Interpretation:<\/b> An HSI close to <b data-path-to-node=\"5,0,0\" data-index-in-node=\"34\">0.25-0.30<\/b> indicates very fresh hops. If it exceeds <b data-path-to-node=\"5,0,0\" data-index-in-node=\"90\">0.50<\/b> , the hops are old or have been improperly stored and can only be used for dry hopping. <\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"5,1,0\"><b data-path-to-node=\"5,1,0\" data-index-in-node=\"0\">Aromatic impact:<\/b> A high HSI means that your oils (Linalool, Myrcene) are degrading into oxidation compounds (like isovaleric acid), bringing notes of cheese or old feet, even if the Myrcene level still looks okay on paper.<\/p>\n<\/li>\n<\/ul>\n<h3 data-path-to-node=\"6\"><a href=\"https:\/\/www.hopstore.fr\/acide-alpha-cohumulonea\/\">Alpha (AA) and Beta (BA) Acid<\/a> Levels<\/h3>\n<p data-path-to-node=\"7\">Even if you are looking for aromatics, the ratio between these two is fundamental.<\/p>\n<ul data-path-to-node=\"8\">\n<li>\n<p data-path-to-node=\"8,0,0\"><b data-path-to-node=\"8,0,0\" data-index-in-node=\"0\">The AA\/BA ratio:<\/b> The closer this ratio is to <b data-path-to-node=\"8,0,0\" data-index-in-node=\"45\">1:1<\/b> , the more &#8220;fine&#8221; the bitterness is considered and the more stable the potential for preserving aromas over time.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"8,1,0\"><b data-path-to-node=\"8,1,0\" data-index-in-node=\"0\">Co-humulone:<\/b> \u200b\u200bExpressed as a percentage of alpha acids. A low level (&lt; 25%) is often associated with a milder bitterness which allows delicate oils like Linalool to express themselves more fully. <\/p>\n<\/li>\n<\/ul>\n<h3 data-path-to-node=\"10\">The Physical Qualities of Pellets<\/h3>\n<p data-path-to-node=\"11\">The visual and tactile appearance of the pellet tells you a lot about the work of the processor:<\/p>\n<ul data-path-to-node=\"12\">\n<li>\n<p data-path-to-node=\"12,0,0\"><b data-path-to-node=\"12,0,0\" data-index-in-node=\"0\">Pelletizing temperature:<\/b> If the pellet is too shiny or &#8220;icy,&#8221; it may have overheated during pressing. This destroys the most volatile oils (Myrcene) before you even open the bag. <\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"12,1,0\"><b data-path-to-node=\"12,1,0\" data-index-in-node=\"0\">Density and friability:<\/b> A pellet should disintegrate easily in warm water (dissolution test). If it remains as hard as wood, its extraction by <i data-path-to-node=\"12,1,0\" data-index-in-node=\"161\">dry hopping<\/i> will be poor, and you will never reach the potentials indicated by chromatography. <\/p>\n<\/li>\n<\/ul>\n<p><em>=&gt; We&#8217;ve written an article about pellets; you can find it <a href=\"https:\/\/www.hopstore.fr\/comment-evaluer-la-qualite-dun-pellet-de-houblon\/\">here.<\/a><\/em><\/p>\n<h3 data-path-to-node=\"14\">Sensory Analysis<\/h3>\n<p data-path-to-node=\"15\">Science cannot replace your sense of smell. The <i data-path-to-node=\"15\" data-index-in-node=\"41\">Rub Test<\/i> involves vigorously rubbing a few pellets in the palm of your hands to warm the oils. <\/p>\n<ul data-path-to-node=\"16\">\n<li>\n<p data-path-to-node=\"16,0,0\"><b data-path-to-node=\"16,0,0\" data-index-in-node=\"0\">What to look for:<\/b> Persistence. Some hops have a strong initial aroma (Myrcene) but the smell disappears after 10 seconds. Great aromatic batches have a scent that lingers on the skin and evolves into more complex notes (fruit, flowers) after 30 seconds.  <\/p>\n<\/li>\n<\/ul>\n<h3 data-path-to-node=\"17\">Polyphenol Content<\/h3>\n<p data-path-to-node=\"18\">The pellets contain plant matter (dry matter).<\/p>\n<ul data-path-to-node=\"19\">\n<li>\n<p data-path-to-node=\"19,0,0\"><b data-path-to-node=\"19,0,0\" data-index-in-node=\"0\">The impact:<\/b> Hops very rich in polyphenols can impart astringency during heavy <i data-path-to-node=\"19,0,0\" data-index-in-node=\"94\">dry hopping<\/i> . This is what sometimes creates the &#8220;hop burn&#8221; (a burning sensation at the back of the throat) in NEIPAs. <\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"19,1,0\"><b data-path-to-node=\"19,1,0\" data-index-in-node=\"0\">Note:<\/b> So-called &#8220;Noble&#8221; hops (like your Malling or Aurora) often have a very different polyphenol\/oil balance than modern &#8220;Aroma&#8221; varieties.<\/p>\n<\/li>\n<\/ul>\n<h3 data-path-to-node=\"21\">The Solubility of Oils<\/h3>\n<p data-path-to-node=\"22\">Not all oils dissolve in beer in the same way.<\/p>\n<ul data-path-to-node=\"23\">\n<li>\n<p data-path-to-node=\"23,0,0\"><b data-path-to-node=\"23,0,0\" data-index-in-node=\"0\">Hydrophobic Oils (Myrcene):<\/b> They do not remain in solution easily. They require biotransformation (yeast) or prolonged contact to leave their mark on beer. <\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"23,1,0\"><b data-path-to-node=\"23,1,0\" data-index-in-node=\"0\">Hydrophilic Oils (Linalool, Geraniol):<\/b> These pass very easily into beer.
