{"id":1282182,"date":"2025-06-23T14:15:18","date_gmt":"2025-06-23T14:15:18","guid":{"rendered":"https:\/\/www.hopstore.fr\/1st-hopstore-meeting-the-organic-ipa-of-the-future\/"},"modified":"2026-07-29T16:36:33","modified_gmt":"2026-07-29T16:36:33","slug":"1st-hopstore-meeting-the-organic-ipa-of-the-future","status":"publish","type":"post","link":"https:\/\/www.hopstore.fr\/en\/1st-hopstore-meeting-the-organic-ipa-of-the-future\/","title":{"rendered":"1st HOPSTORE meeting: the Organic IPA of the future!"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Here are the initial lessons learned from June 16th:<\/p>\n\n<p class=\"wp-block-paragraph\">On the market:  <\/p>\n\n<ul class=\"wp-block-list\">\n<li>The global market is in slight decline (1%). This decline is somewhat greater in France (3%), with significant disparities between breweries. <\/li>\n\n\n\n<li>Many breweries are experiencing a slowdown in their development, but those that are well established locally continue to grow.<\/li>\n\n\n\n<li>Competition is becoming increasingly fierce beyond 20km around the brewery; particularly in supermarkets.<\/li>\n\n\n\n<li><strong>Demand for kegs is exploding<\/strong> . It is driven by the non-profit sector, brewpubs, events and breaks down into two needs: cheap thirst-quenching beer on one hand, and pleasure beer on the other (example: IPA). <\/li>\n\n\n\n<li>Bars are always difficult to convince and manage on a daily basis, even though they are fond of local and hoppy beers. <\/li>\n\n\n\n<li><strong>IPA accounts for a significant portion of sales<\/strong> and often comes second in the range.<\/li>\n\n\n\n<li>Making IPA is a challenge every year because hop availability is unpredictable.<\/li>\n\n\n\n<li>The trend <strong>is for customers to demand new products<\/strong> and increasingly hoppy\/aromatic flavors.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n<p class=\"wp-block-paragraph\">On the organic IPA of tomorrow (with European hops):  <\/p>\n\n<ul class=\"wp-block-list\">\n<li>The IPA style, which we tried to define through a survey, is vast and can accommodate beers that are more or less bitter, more or less dark, more or less aromatic, with an alcohol content of around 6%.<\/li>\n\n\n\n<li>All the beers brewed collaboratively (by 6 participating breweries) and tasted blind fit this definition, even though they are all different. <strong>It can be said that choosing highly aromatic hops, combining varieties, and increasing the dosage (over 5g\/L) allows one to obtain an IPA<\/strong> .<\/li>\n\n\n\n<li>The collaboration that everyone agreed on was with <a href=\"https:\/\/www.brasserie-du-slalom.fr\/\" target=\"_blank\" rel=\"noreferrer noopener\">Brasserie Slalom<\/a> . It closely resembles what seems to be our &#8220;common standard&#8221; for IPAs: an IPA very similar to those of the US craft IPA wave (West Coast, old-school, etc.).
