“Malling is a HOPSTORE discovery. A dual hop with strong potential. First, it’s bittering, with stratospheric cohumulone levels allowing it to replace, for example, a Nugget with 5 points less amino acids. Then, it’s aromatic, bringing notes of stone fruit, ripe fruit, and almonds that are even found in beers high in alcohol and malt. Try it and you’ll love it.”

To use it properly, I recommend:

  • When bittering: start at 0.5g/L if it’s for a very simple blonde beer.
  • In aromatics:
    • under-dosing the bittering agent in anticipation… even if you plan to use it in a whirlpool.
    • to do the dry hopping as cold as possible if you want to limit tannins.
    • in any case, do not let it infuse for more than 3 days.

Description

Malling is a Perle variety found only in Austria. It was developed to achieve a more stable and higher amino acid content (around 8%). Its bittering power is enhanced by a high cohumulone level. It also happens to possess very interesting aromatic properties.

Uses : Pale Ale, Porter, Bock, Pilsner, Lager, IPA

  • Beta: 3 to 6%
  • Cohumulone: ​​35 to 40%

Analysis of the oils and interpretation

This batch is a model of balance and finesse . It is undoubtedly one of the most technically "clean" batches, as it combines great freshness with a very pronounced noble structure.

The Royal Duo: Myrcene & Humulene (33.72% & 29.31%)

These two major oils are almost on equal footing.

  • Sensory analysis: This is the ideal profile for a beer that should be both very fresh on the nose (notes of pine, sap, orange) and elegant on the palate (noble woody, earthy, and herbaceous notes). Neither dominates the other; they complement each other.

The Floral Top Note (Linalool: 0.96%)

Approaching 1% linalool is a sign of high quality.

  • Sensory analysis: This brings a very distinct note of lavender and bergamot that lifts the overall impression. It is this compound that gives the beer its airy and spring-like character.

Remarkable Purity (Caryophyllene: 6.44%)

The rate is low, especially compared to Humulene (Humulene/Caryophyllene ratio of ~4.5).

  • Sensory analysis: This guarantees a remarkably refined bitterness . There is no peppery harshness here. The profile is smooth, silky, and exceptionally elegant.

Absence of Farnesene (0.05%)

No risk of unwanted vegetal notes or "green apple". This is a pure product, concentrated on "noble" aromas.

Usage Tips

Malling is the hop of distinction . It would be a shame to mask it with overly roasted malts or other overly aggressive hops.

  • The Perfect Moment: Boil-dry & Whirlpool

    • End of boiling (10 min): To fix the woody and noble structure of Humulene.

    • Whirlpool (80-85°C): To capture the elegance of Linalool and the freshness of Myrcene without evaporating the finest oils.

  • Preferred Style:

    • German Pilsner / Czech Lager: This is his preferred style. It will produce an extremely drinkable beer with a sophisticated floral aroma.

    • Kolsch or Blonde Ale: For a light beer where the finesse of the hops is highlighted.

    • Modern Season: If you want a season that focuses on floral elegance rather than the wild/spicy side.

It adds elegance to any light malt base. It's a sure bet for competitions or fine tasting beers.
