Ariana one of the few European hops capable of producing an exotic aroma. But don't underestimate its resinous side.”
To bring out all these aromas, I recommend:
- -A DH during primary fermentation for a "real IPA": with character, sharp bitterness, and a pronounced aroma. Minimum 5 g/L
- -A DH during storage will greatly reduce astringency and resinousness.

“Already seen it before but never really tried it? If you have a blonde who's a little bland, you should give it a shot.”
To fully enjoy these aromas, I recommend:
- A SMASH: 100% Pilsen, with 3 g/l in total (1 g at the start, 1 g 15 minutes before the end, 1 g 5 minutes before the end, 1 g at the end). High attenuation for a very dry beer.
- A SINGLE HOP on a classic pale ale recipe: 1 g at the start, 1 g 15 minutes before the end, 1 g 5 minutes before the end, 1 g at the end, and a whirlpool for those with a sweet tooth.

CASHMERE - ORGANIC

“It is sometimes said that the most aromatic hops can hide a beer's flaws... Cashmere is particularly powerful, sometimes with notes of lychee. Its Spanish counterpart is no slouch either, with exotic fruit notes that are very much present.”
To bring out all the flavors, here are a few tips:
- -Do not skimp on the dose: Minimum 5 g/L
- -Late Hoping / Hors feu must be below 75°C
- -DH during fermentation must last at least 3 days at 20°C.
HÜLL MELON - ORGANIC
7,50€ – 180,00€ HTThis 2024 vintage is very strawberry-oriented. A rather difficult aroma to extract and preserve. It would be interesting to test it in cold DH on a NEIPA or Session.
MALLING - ORGANIC

“Malling is a HOPSTORE discovery. A dual-purpose hop with great potential. Bittering , with stratospheric cohumulone levels, allow it to replace, for example, a nugget 5 points less AA. Aromatic , as it brings notes of stone fruit, ripe fruit, and almonds that can even be found in beers with high alcohol and malt content. Try it and you'll love it.
To use it properly, I recommend:
- Bittering start at 0.5 g/L for a simple blonde beer.
- In Aromatic
- Under-doseBittering anticipation... even if you plan to use it in a whirlpool.
- to dry hop as cold as possible if you want to limit the tannins.
- Do not let it steep for more than 3 days in any case.

- -And if possible, another DH during the shift to get more noses.
- -Do not neglect the aging time to allow for proper settling. Ideally, 5 weeks.
