Cashmere A cover-up?

 

“It is sometimes said that the most aromatic hops can hide a beer's flaws... Cashmere is particularly powerful, sometimes with notes of lychee. Its Spanish counterpart is no slouch either, with exotic fruit notes that are very much present.”

To bring out all the flavors, here are a few tips:  

  • -Do not skimp on the dose: Minimum 5 g/L
  • -Late Hoping / Hors feu must be below 75°C
  • -DH during fermentation must last at least 3 days at 20°C.

 

Description

The Cashmere is a fairly new hop and brand new to Organic !!! It was developed by Washington State University and brought to market in 2013 by marrying Cascade and Northern Brewer. Interestingly, its alphas are higher than those of Cascade. Not to be missed for beers that want a kick!

Characteristics: Citrus, Red berries, Melon, Spices

Usage: Saison, Sour, Blanche, Single Hop Pale, Pale Ale, IPA

Acids:

  • Alpha: 7.7 - 9.1%.
  • Beta: 6.4 - 7.1%.
  • Cohumulone: 22-24%.

Cumulative oils: 1.2 - 1.4mL/100g

Possible substitutes: Not easy to say...
