Cashmere: A cover-up for poverty?

“It is sometimes said that the most aromatic hops can mask the flaws of a beer… Cashmere US is particularly powerful with sometimes notes of lychee. Its Spanish counterpart is not to be outdone and the notes of exotic fruits are very present.”

To fully appreciate its aromas, here are a few tips:

  • -Do not skimp on the dose: Minimum 5g/L
  • -The Late Hopping / Off-fire temperature must be below 75°C
  • -The DH during fermentation must last at least 3 days at 20°C

To the tune of Calypso…

“Calypso is making its grand return to the shop! Many of you have asked for it because it is one of the few organic US hops available on the market… and because it has a completely unique aromatic profile. A real fruit salad.”

AMARILLO® • ORGANIC

Amarillo hops are no longer produced organically in the United States starting with the 2024 harvest. To replace them, you can rely on hops from New Zealand.

For a similar effect, you can combine Chinook (for the resinous aspect) and Motueka (for the citrus aspect).
