Description

Superdelic™ (Trial Hop • NZH-102) is a triploid variety (cultivar) that was crossed by Dr. Ron Beatson in 2012 as part of the breeding program in partnership with Plant and Food Research.

Having achieved good results in small plot trials and showing red fruit sensory attributes in early brewing trials, it was quickly transferred by the growers’ committee to the NZ Hops trial farm in 2017. It has shown excellent field performance with a vigorous growth pattern, good resistance to mite damage and high yield.

This exceptional hop allows for more fun than few others! With characteristics of red fruits, candy, citrus and tropical fruits, it offers brewers something totally different to use in their recipes.

“In a Hazy IPA, it revealed its notes of ripe mango, sweet berries and citrus. The Superdelic also showed unique performance, with great biotransformation properties resulting from dry hopping during active fermentation. It’s an incredible addition to our brewery. We were lucky to be among the first to try it,” says Mike Sutherland, director of Sawmill Brewery.

This is a versatile hop that can be used as a standalone addition and exhibits excellent synergies when combined with other hops. It pairs well with Citra, Simcoe, Nelson Sauvin , Motueka , and Riwaka.

Analysis of the oils and interpretation

This batch has a "Refined and Structured" profile. It is built on a base of heavy oils which give it great aromatic persistence.

Humulene Dominance (26.01%)

Humulene is the major component here, even surpassing Myrcene.

  • Sensory analysis: This is the signature of characterful, so-called "noble" hops. Expect a deep, earthy, and slightly spicy woody taste. It's an aroma that doesn't disappear with the first sip; it lingers on the palate.

Moderate Myrcene (21.44%)

  • Sensory analysis: The freshness (pine/citrus) is present but acts as a counterpoint rather than the main focus. It softens the darker side of the Humulene without masking it.

Pronounced Peppery Character (Caryophyllene: 10.31%)

This is one of your highest rates for this compound.

  • Sensory analysis: Caryophyllene adds a "kick." It imparts a peppery, almost dry, resinous note that enhances the rustic character of the hops. The humulene/caryophyllene ratio (~2.5) remains excellent, ensuring that this peppery aspect doesn't become an unpleasant harshness.

Base Notes: Linalool and Terpinene

  • Linalool (0.51%) : Provides a subtle floral touch that softens the edges.

  • Terpinene-4-ol (0.24%) : This compound provides a very clean, medicinal herbaceous nuance, somewhat like tea or marjoram, which reinforces the "fresh garden hops" sensation.

Professional Usage Tips

Superdelic is a hop that holds its own . It doesn't get overpowered by the malt.

  • The Ideal Moment: Late Hopping (15 to 5 minutes before the end)

    • Unlike myrcene, which dissipates quickly in heat, humulene is more resistant. This batch is perfect for creating the "aromatic body" of your beer. It will impart that lingering hop flavor sought after in traditional beers.

    • Tip: Don't use it on its own for dry hopping if you're looking for a burst of fruit, as it might sound a bit too "earthy." However, it's perfect for dry hopping a beer that lacks oaky structure.

  • Preferred Style:

    • Saison Rustique: Its herbaceous and peppery side will blend wonderfully with the esters of Saison yeast.

    • English Bitter or ESB: To rediscover that woody and earthy character typical of hops from across the Channel.

    • Pilsner of Character: For a beer that can stand up to a slightly mineral water.

  • Recommended whirlpool temperature: 85°C

    • This temperature allows the extraction of the richness of Humulene and Caryophyllene while retaining enough Myrcene for freshness of the top.

In summary: This is a "foundational" hop. It brings the complexity and length on the palate that are sometimes lacking in modern hops that are too focused on volatile fruit.
