To fully appreciate all its aromas, I recommend:

  • Late hopping in temperatures below 75°C. If you have the time, it’s really worth it.
  • A DH during primary fermentation. Minimum 7.5 g/L
  • And if possible, another Demon Hunter during the watch to have more noses
  • Do not neglect the aging time to allow it to settle properly. Ideally 5 weeks.

Description

Tango, originally known as 2011/02/04, was developed in Hüll and has been cultivated in the Hallertau since 2020.

Its heritage includes world-renowned varieties such as Cascade and Hallertauer Tradition , which is reflected in its aroma and agronomic characteristics.

Aromas : Citrus, Passion Fruit, Berries and Flowers

Uses : IPA, Pale Ale, Lager

Acids :

  • Alpha: 7.5 – 12.4%
  • Beta: 6-10%
  • Cohumulone: ​​19-25%

Analysis of the oils and interpretation

This batch has an aromatic profile that could be described as "Floral Elegance" . It is a very subtle hop, leaning towards noble flowers rather than raw resins or explosive citrus.

A Noble and Sophisticated Heart (Humulene and Caryophyllene)

  • Humulene (15.92%) : This moderate level ensures the woody, earthy and noble body, signature of great continental type hops (Saaz or Hallertau).

  • Exceptional Noble Ratio (Caryophyllene: 2.13%) : With a humulene/caryophyllene ratio of ~7.5, this batch is technically the purest. This guarantees a complete absence of harsh peppery notes, for an extremely refined mouthfeel.

The Floral and Fruity Signature (Geranyl Acetate and Geraniol)

This is the marker for this batch:

  • Geranyl acetate (1.38%) : This level is very high and unusual. It imparts an intense floral note with hints of fruit (bergamot, pear). This compound is what will "enchant" the aroma of the beer.

  • Geraniol (0.19%) : Although present in small amounts on its own, it enhances the floral note. The overall effect evokes a delicate floral fragrance. Through biotransformation, it can be broken down into citronellol, which provides a highly desirable lemon zest effect.

A Contained Freshness (Myrcene: 39.56%)

The Myrcene level is good, ensuring a base of fresh pine , but it is perfectly contained and balanced by the top floral notes.

Advice for the Brewer

The Tango is a precision tool for the creative brewer:

  • Usage: This is the ideal candidate for Dry Hopping or Whirlpool at low temperature, in order to preserve the highly volatile Geranyl Acetate.

  • Recommended style: An IPA , a prestige Pilsner , a delicate Grisette or an American Wheat where one seeks a unique floral elegance.
