To create a truly delicious fruit cocktail, I recommend pairing it with, as you prefer:

  • -Tango : the sweetest of the Europeans with a pleasantly light sweetness on a NEIPA or a SESSION IPA.
  • -Cashmere : A very fruity aromatic that reveals different tastes depending on the combinations and yeasts used.
  • -The Vista : A promising newcomer with its very particular aromatic profile.
  • -Alpha Aroma : Tutti frutti, do you want it? Here it is!

TANGO • ORGANIC

Revelation of the year 2025, Tango has given hope to many French breweries struggling to obtain exemptions!! It is one of the few European hops suitable for a NEIPA”

To fully appreciate all its aromas, I recommend:

  • Late hopping in temperatures below 75°C. If you have the time, it’s really worth it.
  • A DH during primary fermentation. Minimum 7.5 g/L
  • And if possible, another Demon Hunter during the watch to have more noses
  • Do not neglect the aging time to allow it to settle properly. Ideally 5 weeks.

“It is sometimes said that the most aromatic hops can mask the flaws of a beer… Cashmere US is particularly powerful with sometimes notes of lychee. Its Spanish counterpart is not to be outdone and the notes of exotic fruits are very present.”

To fully appreciate its aromas, here are a few tips:

  • -Do not skimp on the dose: Minimum 5g/L
  • -The Late Hopping / Off-fire temperature must be below 75°C
  • -The DH during fermentation must last at least 3 days at 20°C

“Cascade is a must-have in craft beer. Used at every stage and in every style of beer. It’s a basic spice, just like salt in cooking. Moreover, we’re fortunate to have had stable quality and volumes for years.”

The 2025 vintage is no exception to its usual pattern. The one from Spain is still very citrusy (bitter orange). For a sweeter taste, opt for the Cascade from Austria.

MALLING • BIO

“Malling is a HOPSTORE discovery. A dual hop with strong potential. First, it’s bittering, with stratospheric cohumulone levels allowing it to replace, for example, a Nugget with 5 points less amino acids. Then, it’s aromatic, bringing notes of stone fruit, ripe fruit, and almonds that are even found in beers high in alcohol and malt. Try it and you’ll love it.”

To use it properly, I recommend:

  • When bittering: start at 0.5g/L if it’s for a very simple blonde beer.
  • In aromatics:
    • under-dosing the bittering agent in anticipation… even if you plan to use it in a whirlpool.
    • to do the dry hopping as cold as possible if you want to limit tannins.
    • in any case, do not let it infuse for more than 3 days.
