“Revelation of the year 2025, Tango has given hope to many French breweries that have run out of exemptions! It is one of the few European hops suitable for a NEIPA."
To bring out all its aromas, I recommend:
- -Late hopping at less than 75°C. If you have time, it's really worth it.
- -One DH during primary fermentation. Minimum 7.5 g/L
- -And if possible, another DH during the shift to get more noses.
- -Do not neglect the aging time to allow for proper settling. Ideally, 5 weeks.

To compensate for its absence, I recommend:
- Styrian Golding: Delicate and complex, it offers a bouquet of subtle aromas and a long finish.
- The Saphir : Largely underrated, this hop increases drinkability with its slightly lemony touch.
- Tettnanger: From the same lineage as SAAZ, it resembles it with a slightly peppery effect as a bonus.
- The Spalter Select : The other sibling of SAAZ, it is the easiest to use because it is the most neutral. Its "herbaceous" finish is easily recognizable.

“Malling is a HOPSTORE discovery. A dual-purpose hop with great potential. Bittering , with stratospheric cohumulone levels, allow it to replace, for example, a nugget 5 points less AA. Aromatic , as it brings notes of stone fruit, ripe fruit, and almonds that can even be found in beers with high alcohol and malt content. Try it and you'll love it.
To use it properly, I recommend:
- Bittering start at 0.5 g/L for a simple blonde beer.
- In Aromatic
- Under-doseBittering anticipation... even if you plan to use it in a whirlpool.
- to dry hop as cold as possible if you want to limit the tannins.
- Do not let it steep for more than 3 days in any case.
