CALLISTA • ORGANIC

Price range: 6,50€ through 170,00€ HT

Callista: I will drink your Chalice.

“Red fruit aromas are very volatile, so it’s more difficult to get them in a beer… but not impossible!”

To fully appreciate these aromas, I recommend:

  • -A DH during storage, as cold as possible, for a minimum of 5 days, to bring out the fruit aromas and avoid the vegetal side.

If you have any doubts, you can reach me.

CASCADE • ORGANIC

Price range: 6,50€ through 190,00€ HT

The stunt pro

“Cascade is a must-have in craft beer. Used at every stage and in every style of beer. It’s a basic spice, just like salt in cooking. Moreover, we’re fortunate to have had stable quality and volumes for years.”

The 2025 vintage is no exception to its usual pattern. The one from Spain is still very citrusy (bitter orange). For a sweeter taste, opt for the Cascade from Austria.

MOTUEKA™ • ORGANIC

Price range: 10,00€ through 243,45€ HT

Motueka, the rockstar!

“A must-have among New Zealand hops. A true aromatic catalyst that works in all beer styles. A few grams in a thirst-quenching lager and a half-pint becomes a pint, a pint leads to another pint… and the keg is quickly emptied. It’s one of the few hops capable of releasing citrus aromas at every stage of brewing.

Here are some use cases:

  • In a thirst-quenching Pale Ale: 2g/L in the whirlpool to enhance without altering.
  • In a typical IPA: A DH of 3g/L during primary fermentation is sufficient to release pleasant fruity aromas.
  • In a NEIPA: A DH of 6g/L during fermentation to get exotic fruits + A DH during conditioning to get the “cocktail” effect.

If you have any doubts, you can reach me.

SAAZ • ORGANIC

Price range: 7,50€ through 190,00€ HT

No Saaz? No panic…

“Organic Saaz is becoming scarce on the market this year.”

To compensate for his absence, I recommend:

  • Styrian Golding : Fine and complex, it brings a bouquet of subtle aromas and length.
  • The Sapphire : Widely underrated, this hop increases drinkability with its slightly lemony touch.
  • The Tettnanger : From the same lineage as the SAAZ, it resembles it with a slightly peppery effect as a bonus.
  • The Spalter Select : The other sibling of the SAAZ, it is the easiest to use because it is the most neutral. Its “herbaceous” finish is easily recognizable.

SOLERO • ORGANIC

A future star of fruity and sweet beers. It brings a lot of roundness and smoothness. Ideal for a low-bitter IPA, a session beer, or a NEIPA.

SUPERDELIC™ • ORGANIC

10,00 HT

Super delicious

“A new, ultra-aromatic variety already has its fans. It’s one of the only hops to offer this red fruit palette. These aromas are extremely volatile, so to get them in the beer, you’ll have to use it at a low temperature. Otherwise, you’ll mainly get tangy, exotic aromas… There are worse things…”

WAI-TI™ • BIO

Why not ?

“Wai-Ti is making a big comeback!! With its incredibly low AA content, it’s a must-have for NEIPAs, Session beers, and other light, highly aromatic brews. The vineyard peach effect in cold dry brewing is simply stunning.”
