To fully express all these aromas, I recommend:
- -A DH (Dry Density) during primary fermentation for a “true IPA”: with character, a pronounced bitterness, and a strong aroma. Minimum 5 g/L
- -A DH during guard will greatly reduce the astringency and resinous effect.

To fully appreciate its aromas, here are a few tips:
- -Do not skimp on the dose: Minimum 5g/L
- -The Late Hopping / Off-fire temperature must be below 75°C
- -The DH during fermentation must last at least 3 days at 20°C

Price range: 6,50€ through 180,00€ HTThis 2024 vintage is very strawberry-forward. It’s a rather difficult aroma to extract and preserve. It would be interesting to try it chilled in a NEIPA or Session whisky.

To fully appreciate all its aromas, I recommend:
- Late hopping in temperatures below 75°C. If you have the time, it’s really worth it.
- A DH during primary fermentation. Minimum 7.5 g/L
- And if possible, another Demon Hunter during the watch to have more noses
- Do not neglect the aging time to allow it to settle properly. Ideally 5 weeks.

MALLING • BIO
Price range: 7,50€ through 167,00€ HTTo be included in all mailings
“Malling is a HOPSTORE discovery. A dual-purpose hop with great potential. First, it’s bittering, with stratospheric cohumulone levels allowing it to replace, for example, a Nugget with 5 points less AA. Then, it’s aromatic, bringing notes of stone fruit, ripe fruit, and almonds that are even found in beers high in alcohol and malt. To try it is to love it.”
To use it properly, I recommend:
- When bittering: start at 0.5g/L if it’s for a very simple blonde beer.
- In aromatics:
- under-dosing the bittering agent in anticipation… even if you plan to use it in a whirlpool.
- to do the dry hopping as cold as possible if you want to limit tannins.
- in any case, do not let it infuse for more than 3 days.

“Seen it before but never really tried it? If you have a rather bland blonde, you should give it a go.”
To fully appreciate these aromas, I recommend:
- A SMASH: 100% Pilsner, with 3g/l total (1g at the beginning, 1g 15 minutes before the end, 1g at 5 minutes, 1g at 0 minutes). A significant reduction to obtain a very dry beer.
- A SINGLE HOP on a classic pale recipe: 1g at the beginning, 1g at 15 minutes from the end, 1g at 5 minutes, 1g at 0 minutes and a whirlpool for those with a sweet tooth.
