- A SMASH: 100% Pilsen, with 3 g/l in total (1 g at the start, 1 g 15 minutes before the end, 1 g 5 minutes before the end, 1 g at the end). High attenuation for a very dry beer.
- A SINGLE HOP on a classic pale ale recipe: 1 g at the start, 1 g 15 minutes before the end, 1 g 5 minutes before the end, 1 g at the end, and a whirlpool for those with a sweet tooth.

“Malling is a HOPSTORE discovery. A dual-purpose hop with great potential. Bittering , with stratospheric cohumulone levels, allow it to replace, for example, a nugget 5 points less AA. Aromatic , as it brings notes of stone fruit, ripe fruit, and almonds that can even be found in beers with high alcohol and malt content. Try it and you'll love it.
To use it properly, I recommend:
- Bittering start at 0.5 g/L for a simple blonde beer.
- In Aromatic
- Under-doseBittering anticipation... even if you plan to use it in a whirlpool.
- to dry hop as cold as possible if you want to limit the tannins.
- Do not let it steep for more than 3 days in any case.

To compensate for its absence, I recommend:
- Styrian Golding: Delicate and complex, it offers a bouquet of subtle aromas and a long finish.
- The Saphir : Largely underrated, this hop increases drinkability with its slightly lemony touch.
- Tettnanger: From the same lineage as SAAZ, it resembles it with a slightly peppery effect as a bonus.
- The Spalter Select : The other sibling of SAAZ, it is the easiest to use because it is the most neutral. Its "herbaceous" finish is easily recognizable.

L’Amarillo n’est plus produit en agriculture biologique aux États Unis à compter de la récolte 2024. Pour le remplacer vous pouvez compter sur les houblons de Nouvelle-Zélande. Pour un effet approchant, on peut associer du Chinook (pour le côté résineux) et du Motueka (pour le côté agrume). “On dit parfois que les houblons les plus aromatiques peuvent cacher les défauts d’une bière… Le Cashmere US est particulièrement puissant avec parfois des notes de Litchis. Son homologue Espagnol n’est pas en reste et les notes de fruits exotiques sont bien présentes.” Pour en tirer tous les arômes, voici quelques conseils : “Le Sultana fait son grand retour. A la manière d’un willamette ou d’un mount hood, il est un houblon fruité passe partout facile à doser. La comparaison s’arrête là… mais si vous chercher du Tutti Fruitti, il est fait pour vous !!” Pour bien exprimer tous ces arômes, je vous conseille : En cas de doute, je suis joignable. “Un incontournable des houblons NZ. Véritable catalyseur aromatique qui fonctionne dans tous les styles de bières. Quelques grammes dans la blonde de soif et le demi devient une pinte, la pinte appelle la pinte… et le fût est vite plié. C’est l’un des rares houblons à pouvoir libérer des arômes d’agrumes à toutes les étapes du brassage.“ Voici quelques cas d’usages : En cas de doute, je suis joignable. Pour des IPA bien charpentées avec un nez fruits de la passion. Star des NEIPA; doux, presque sucré, avec un effet “multi-fruits exotiques” incroyable. “Un vieux de la veille qui peut sauver n’importe quelle IPA. A faible dose, l’effet raisin blanc est palpable mais à partir de 5gr/L c’est une toute autre gamme aromatique qui s’exprime. Il m’est arrivé de le confondre avec du Mosaïc. Et comme il est produit en grande quantité depuis longtemps, il est plus facile à sourcer. “ Très utilisé en amérisant, il n’en reste pas moins un excellent houblon aromatique. L’un des rares à pouvoir apporter des arômes de fruits rouges. Arrêt de la production en BIO en Nouvelle-Zélande à partir de 2022. Production de Rakau – Alpha Aroma en Espagne! “Une nouvelle variété ultra-aromatique a déjà ses adeptes. C’est l’un des seuls houblons à proposer cette palette fruits rouges. Ces arômes sont extrêmement volatiles donc pour les avoir dans la bière, il faudra l’utiliser à basse T°. Sinon vous aurez principalement des arômes exotiques acidulés… Y’a pire…” “Le Wai-Ti fait son grand retour !! Avec son taux d’AA ras les pâquerettes c’est un must have pour les NEIPA, Session et autre bières légères très parfumées.
