To fully appreciate these aromas, I recommend:

  • A SMASH: 100% Pilsner, with 3g/l total (1g at the beginning, 1g 15 minutes before the end, 1g at 5 minutes, 1g at 0 minutes). A significant reduction to obtain a very dry beer.
  • A SINGLE HOP on a classic pale recipe: 1g at the beginning, 1g at 15 minutes from the end, 1g at 5 minutes, 1g at 0 minutes and a whirlpool for those with a sweet tooth.

“Cascade is a must-have in craft beer. Used at every stage and in every style of beer. It’s a basic spice, just like salt in cooking. Moreover, we’re fortunate to have had stable quality and volumes for years.”

The 2025 vintage is no exception to its usual pattern. The one from Spain is still very citrusy (bitter orange). For a sweeter taste, opt for the Cascade from Austria.

CELEIA / Styrian Golding • ORGANIC

Cashmere: A cover-up for poverty?

 

“It is sometimes said that the most aromatic hops can mask the flaws of a beer… Cashmere US is particularly powerful with sometimes notes of lychee. Its Spanish counterpart is not to be outdone and the notes of exotic fruits are very present.”

To fully appreciate its aromas, here are a few tips:

  • -Do not skimp on the dose: Minimum 5g/L
  • -The Late Hopping / Off-fire temperature must be below 75°C
  • -The DH during fermentation must last at least 3 days at 20°C

SAAZ • ORGANIC

No Saaz? No panic…

 

“Organic Saaz is becoming scarce on the market this year.”

To compensate for his absence, I recommend:

  • Styrian Golding : Fine and complex, it brings a bouquet of subtle aromas and length.
  • The Sapphire : Widely underrated, this hop increases drinkability with its slightly lemony touch.
  • The Tettnanger : From the same lineage as the SAAZ, it resembles it with a slightly peppery effect as a bonus.
  • The Spalter Select : The other sibling of the SAAZ, it is the easiest to use because it is the most neutral. Its “herbaceous” finish is easily recognizable.
