HALLERTAU WHITE • ORGANIC

Price range: 7,50€ through 190,00€ HT

Blanc manger Coco…

“Hallertau Blanc is an indispensable ally when looking for an exotic aroma. However, you shouldn’t skimp on the quantities and should favor a beer that is low in malt and alcohol, otherwise it will struggle to express itself.”

SAAZ • ORGANIC

Price range: 7,50€ through 190,00€ HT

No Saaz? No panic…

“Organic Saaz is becoming scarce on the market this year.”

To compensate for his absence, I recommend:

  • Styrian Golding: Fine and complex, it brings a bouquet of subtle aromas and length.
  • The Sapphire : Widely underrated, this hop increases drinkability with its slightly lemony touch.
  • The Tettnanger : From the same lineage as the SAAZ, it resembles it with a slightly peppery effect as a bonus.
  • Spalter Select: The other sibling of the SAAZ, it is the easiest to use because it is the most neutral. Its “herbaceous” finish is easily recognizable.

AKOYA • ORGANIC

Price range: 7,50€ through 187,50€ HT

Akoya? Never heard of it…

“Tested last year in a NEIPA in combination with Alpha Aroma. The result was very satisfying with a particularly delicious pineapple effect. The Akoya is powerful and fragrant.”

Particularly fresh and powerful with a slightly mentholated effect. Worth discovering.

CHINOOK • ORGANIC

Price range: 7,50€ through 185,00€ HT

The Chinook is here to stay…

“Chinook is pretty much the alpha and omega of a good old-fashioned IPA. With bitterness, fruit, and a resinous, heady finish. Far removed from cryo and other CO2 extracts that have sold their souls in the race for an aroma that has become artificial; vanished in two rays of sunshine.”

COMET • BIO

174,50 HT

Comet: Make a wish!

“Want to make a limited-edition beer bursting with fruit using European hops? Comet should be on your shopping list.”

To create a truly delicious fruit cocktail, I recommend pairing it with, as you prefer:

  • -Tango : the sweetest of the Europeans with a pleasantly light sweetness on a NEIPA or a SESSION IPA.
  • Cashmere: A very fruity aromatic that reveals different tastes depending on the combinations and yeasts used.
  • -The Vista : A promising newcomer with its very particular aromatic profile.
  • -Alpha Aroma : Tutti frutti, do you want it? Here it is!

CALLISTA • ORGANIC

Price range: 6,50€ through 170,00€ HT

Callista: I will drink your Chalice.

“Red fruit aromas are very volatile, so it’s more difficult to get them in a beer… but not impossible!”

To fully appreciate these aromas, I recommend:

  • -A DH during storage, as cold as possible, for a minimum of 5 days, to bring out the fruit aromas and avoid the vegetal side.

If you have any doubts, you can reach me.

TANGO • ORGANIC

Price range: 7,50€ through 169,75€ HT

Tang, but much, much better!!

Revelation of the year 2025, Tango has given hope to many French breweries struggling to obtain exemptions!! It is one of the few European hops suitable for a NEIPA”

To fully appreciate all its aromas, I recommend:

  • Late hopping in temperatures below 75°C. If you have the time, it’s really worth it.
  • A DH during primary fermentation. Minimum 7.5 g/L
  • And if possible, another Demon Hunter during the watch to have more noses
  • Do not neglect the aging time to allow it to settle properly. Ideally 5 weeks.

If you have any doubts, you can reach me.

MALLING • BIO

Price range: 7,50€ through 167,00€ HT

To be included in all mailings

“Malling is a HOPSTORE discovery. A dual-purpose hop with great potential. First, it’s bittering, with stratospheric cohumulone levels allowing it to replace, for example, a Nugget with 5 points less AA. Then, it’s aromatic, bringing notes of stone fruit, ripe fruit, and almonds that are even found in beers high in alcohol and malt. To try it is to love it.”

To use it properly, I recommend:

  • When bittering: start at 0.5g/L if it’s for a very simple blonde beer.
  • In aromatics:
    • under-dosing the bittering agent in anticipation… even if you plan to use it in a whirlpool.
    • to do the dry hopping as cold as possible if you want to limit tannins.
    • in any case, do not let it infuse for more than 3 days.

You’ll tell me what you think…
