ABIS • BIO
Price range: 7,50€ through 145,00€ HT
Full speed ahead in the Abis!!
“For those of you always looking for new flavors, here’s one that’s generating a lot of buzz. It’s a HOPSTORE exclusive, and at this price, it’s a no-brainer!”
AKOYA • ORGANIC
Price range: 7,50€ through 187,50€ HTAkoya? Never heard of it…
“Tested last year in a NEIPA in combination with Alpha Aroma. The result was very satisfying with a particularly delicious pineapple effect. The Akoya is powerful and fragrant.”
Particularly fresh and powerful with a slightly mentholated effect. Worth discovering.
ALPHA AROMA • ORGANIC
Price range: 7,50€ through 30,00€ HTMachos Muchos Alpha!!
“Alpha Aroma is the European version of New Zealand’s Rakau. The comparison ends there… but if you’re looking for Tutti Frutti, this is the one for you!!”
To fully express all these aromas, I recommend:
- -A Whirlpool for speed…
- -Late hopping at less than 75°C. If you have the time, it’s really worth it.
- -A DH during primary fermentation. Minimum 5 g/L
If you have any doubts, you can reach me.
ALTUS™ • BIO
250,00€ HTAMARILLO® • ORGANIC
Amarillo hops are no longer produced organically in the United States starting with the 2024 harvest. To replace them, you can rely on hops from New Zealand.
For a similar effect, you can combine Chinook (for the resinous aspect) and Motueka (for the citrus aspect).
ARIANA • BIO
Price range: 7,50€ through 190,00€ HTAriana? Tall, of course…
“Ariana is one of the few European hops capable of producing an exotic aroma. But don’t underestimate its resinous side.”
To fully express all these aromas, I recommend:
- -A DH (Dry Density) during primary fermentation for a “true IPA”: with character, a pronounced bitterness, and a strong aroma. Minimum 5 g/L
- -A DH during guard will greatly reduce the astringency and resinous effect.
If you have any doubts, you can reach me.
AURORA • ORGANIC
Price range: 6,50€ through 150,00€ HTAurora: At the dawn of a new (beer) era…
“Seen it before but never really tried it? If you have a rather bland blonde, you should give it a go.”
To fully appreciate these aromas, I recommend:
- A SMASH: 100% Pilsner, with 3g/l total (1g at the beginning, 1g 15 minutes before the end, 1g at 5 minutes, 1g at 0 minutes). A significant reduction to obtain a very dry beer.
- A SINGLE HOP on a classic pale recipe: 1g at the beginning, 1g at 15 minutes from the end, 1g at 5 minutes, 1g at 0 minutes and a whirlpool for those with a sweet tooth.
If you have any doubts, you can reach me.
CALLISTA • ORGANIC
Price range: 6,50€ through 170,00€ HTCallista: I will drink your Chalice.
“Red fruit aromas are very volatile, so it’s more difficult to get them in a beer… but not impossible!”
To fully appreciate these aromas, I recommend:
- -A DH during storage, as cold as possible, for a minimum of 5 days, to bring out the fruit aromas and avoid the vegetal side.
If you have any doubts, you can reach me.
CASHMERE • ORGANIC
Price range: 7,50€ through 190,00€ HTCashmere: A cover-up for poverty?
“It is sometimes said that the most aromatic hops can mask the flaws of a beer… Cashmere US is particularly powerful with sometimes notes of lychee. Its Spanish counterpart is not to be outdone and the notes of exotic fruits are very present.”
To fully appreciate its aromas, here are a few tips:
- -Do not skimp on the dose: Minimum 5g/L
- -The Late Hopping / Off-fire temperature must be below 75°C
- -The DH during fermentation must last at least 3 days at 20°C
CELEIA / Styrian Golding • ORGANIC
Price range: 6,50€ through 157,50€ HTSlovenian calm and constancy.
“Celeia, also known as Styrian Golding, is a noble hop, for example. It is delicate and complex, and adds a lot of length and drinkability to your lightest blondes.”
CHINOOK • ORGANIC
Price range: 7,50€ through 185,00€ HTThe Chinook is here to stay…
“Chinook is pretty much the alpha and omega of a good old-fashioned IPA. With bitterness, fruit, and a resinous, heady finish. Far removed from cryo and other CO2 extracts that have sold their souls in the race for an aroma that has become artificial; vanished in two rays of sunshine.”
COMET • BIO
174,50€ HTComet: Make a wish!
“Want to make a limited-edition beer bursting with fruit using European hops? Comet should be on your shopping list.”
To create a truly delicious fruit cocktail, I recommend pairing it with, as you prefer:
- -Tango : the sweetest of the Europeans with a pleasantly light sweetness on a NEIPA or a SESSION IPA.
- -Cashmere : A very fruity aromatic that reveals different tastes depending on the combinations and yeasts used.
- -The Vista : A promising newcomer with its very particular aromatic profile.
- -Alpha Aroma : Tutti frutti, do you want it? Here it is!
EUREKA™ • ORGANIC
250,00€ HTFUGGLE • ORGANIC
Price range: 7,50€ through 160,00€ HTThe 2024 vintage is the best of the last five years. Aromatically, it will be wonderful. For example, with a white wine.
GOLDING • ORGANIC
Price range: 7,50€ through 185,00€ HTHALLERTAU WHITE • ORGANIC
Price range: 7,50€ through 190,00€ HTBlanc manger Coco…
“Hallertau Blanc is an indispensable ally when looking for an exotic aroma. However, you shouldn’t skimp on the quantities and should favor a beer that is low in malt and alcohol, otherwise it will struggle to express itself.”
HERKULES • ORGANIC
Price range: 7,50€ through 160,00€ HTHERSBRUCKER • ORGANIC
Price range: 7,50€ through 160,00€ HTHÜLL MELON • ORGANIC
Price range: 6,50€ through 140,00€ HTThis 2024 vintage is very strawberry-forward. It’s a rather difficult aroma to extract and preserve. It would be interesting to try it chilled in a NEIPA or Session whisky.
MAGNAT• ORGANIC
Price range: 7,50€ through 165,00€ HTA beer magnet
“Magnat has the bitterness we like. It’s rich in amino acids and easy to dose thanks to its low cohumulone content. And for the adventurous, it’s also a very interesting aromatic (like a Nugget).”
MALLING • BIO
Price range: 7,50€ through 167,00€ HTTo be included in all mailings
“Malling is a HOPSTORE discovery. A dual hop with strong potential. First, it’s bittering, with stratospheric cohumulone levels allowing it to replace, for example, a Nugget with 5 points less amino acids. Then, it’s aromatic, bringing notes of stone fruit, ripe fruit, and almonds that are even found in beers high in alcohol and malt. Try it and you’ll love it.”
To use it properly, I recommend:
- When bittering: start at 0.5g/L if it’s for a very simple blonde beer.
- In aromatics:
- under-dosing the bittering agent in anticipation… even if you plan to use it in a whirlpool.
- to do the dry hopping as cold as possible if you want to limit tannins.
- in any case, do not let it infuse for more than 3 days.
You’ll tell me what you think…
MANDARINA BAVARIA • ORGANIC
Price range: 6,50€ through 185,00€ HTThe 2023 Mandarina Bavaria offers excellent value for money for an aromatic hop.
MOTUEKA™ • ORGANIC
Price range: 10,00€ through 243,45€ HTMotueka, the rockstar!
“A must-have among New Zealand hops. A true aromatic catalyst that works in all beer styles. A few grams in a thirst-quenching lager and a half-pint becomes a pint, a pint leads to another pint… and the keg is quickly emptied. It’s one of the few hops capable of releasing citrus aromas at every stage of brewing. “
Here are some use cases:
- In a thirst-quenching Pale Ale: 2g/L in the whirlpool to enhance without altering.
- In a typical IPA: A DH of 3g/L during primary fermentation is sufficient to release pleasant fruity aromas.
- In a NEIPA: A DH of 6g/L during fermentation to get exotic fruits + A DH during conditioning to get the “cocktail” effect.
If you have any doubts, you can reach me.
MOUTERE™ • ORGANIC
10,00€ HTFor well-structured IPAs with a passion fruit aroma.
NECTARON® • ORGANIC
Price range: 10,00€ through 249,50€ HTA star among NEIPAs; smooth, almost sweet, with an incredible “multi-exotic fruit” effect.
NELSON SAUVIN™ • ORGANIC
Price range: 10,00€ through 243,45€ HTThe savior
“An old-timer that can save any IPA. At low doses, the white grape effect is noticeable, but from 5g/L onwards, a whole different aromatic range emerges. I’ve even mistaken it for Mosaic. And since it has been produced in large quantities for a long time, it’s easier to source. “
PACIFIC GEM™ • ORGANIC
Widely used for bittering, it is nonetheless an excellent aromatic hop. One of the few capable of imparting red fruit aromas.
PEARL • ORGANIC
Price range: 6,50€ through 160,00€ HTA versatile hop that can be used at all stages of brewing without altering the malty character of the beer.
PILGRIM • ORGANIC
Price range: 7,50€ through 185,00€ HTRAKAU (Alpha Aroma • Organic)
End of organic production in New Zealand from 2022.
Rakau – Alpha Aroma production in Spain!
SAAZ • ORGANIC
Price range: 7,50€ through 190,00€ HTNo Saaz? No panic…
“Organic Saaz is becoming scarce on the market this year.”
To compensate for his absence, I recommend:
- Styrian Golding : Fine and complex, it brings a bouquet of subtle aromas and length.
- The Sapphire : Widely underrated, this hop increases drinkability with its slightly lemony touch.
- The Tettnanger : From the same lineage as the SAAZ, it resembles it with a slightly peppery effect as a bonus.
- The Spalter Select : The other sibling of the SAAZ, it is the easiest to use because it is the most neutral. Its “herbaceous” finish is easily recognizable.
If you have any doubts, you can reach me by phone, SMS, email, etc.
SAPPHIRE • ORGANIC
Price range: 7,50€ through 160,00€ HTA sapphire mine to explore.
“Although little known, sapphire is a very interesting alternative to Saaz because it brings a lot of finesse with a slightly lemony note.”
SOLERO • ORGANIC
A future star of fruity and sweet beers. It brings a lot of roundness and smoothness. Ideal for a low-bitter IPA, a session beer, or a NEIPA.
SORACHI ACE • ORGANIC
Price range: 7,50€ through 205,00€ HTGame, set, and match!
“You’re probably familiar with Sorachi Ace US with its coconut notes. Spanish Sorachi is no slouch either, with a powerful, vegetal aroma. Be careful, though, not to underestimate its bittering power, even in DH.”
